Week 10 - Day 4


*We learned in Week 9 that carrots contain "carotenoids"
which act as anti-carcinogens and antioxidants.
Lemons and oranges contain "limonenes"
which increases production of enzymes that help the body get rid of carcinogens.
Whole grains contain "phytic acid"
which binds to iron, preventing the creation of cancer-causing free radicals.
Ginger contains "gingerols"
which are anti-oxidants and anti-inflammatory agents.

Can you remember what other vitamin is found in carrots
that helps protect against night blindness and cancers,
and helps stimulate the immune system to fight infections?
(Answer found on page 117 in the Healthy Home Ec book.)

Today's recipe includes all of these foods
which makes homemade carrot cake
a superior choice to a boxed cake mix.

Gather your supplies and ingredients.
(Note:  Check your book.  Not all ingredients are shown.)


Mix the dry ingredients together.




Cut off the ends of the carrots...


peel them...




then finely shred them
using a food processor or manual shredder.


Wash the zucchini,
cut off the ends,
then finely shred.




Mix the remaining ingredients together.
(Step 3 in procedure.)




Add the wet ingredients to the dry ingredients and blend together.


Transfer to the baking dish, and bake as directed.








The cake is done when a toothpick inserted in the center comes out clean.


While the cake is cooling, make the citrus cream cheese frosting as directed on page 139.


Frost the cake once it's completely cooled.


The finished product:




 Decorate as desired for a birthday cake.







In the Bible 
in the book of John, chapter 3 verses 3-7,
Jesus told us,
"Truly, truly, I say to you,
unless one is born again
he cannot see the kingdom of God."
Nicodemus, the one Jesus was speaking to, asked,
"How can a man be born when he is old?
Can he enter a second time into his mother's womb and be born?"
"Jesus answered him,
'Truly, truly, I say to you,
unless one is born of water and the Spirit,
he cannot enter the kingdom of God.
That which is born of the flesh is flesh,
and that which is born of the Spirit is spirit.'"


We know that we are all born with a body (flesh),
but how are we born of the Spirit?
When we confess with our mouth and believe in our hearts that Jesus is Lord,
repent of our sins,
and commit and entrust our lives to Him,
trusting that His death on the cross paid our penalty for our sins,
then we are born of the Spirit.
We have been born into a new family...
God's family.
We become His child.
"But to all who received Him {Jesus}, who believed in His name,
He gave power to become children of God."  (John 1:12)

If you've never asked Jesus to be the Lord of your life,
perhaps today could be your "spiritual birthday."
Being a part of God's family
is something you don't want to miss out on!
Being a part of His family = eternal life and blessing
Not being a part of His family = eternal death and suffering
"He who believes in the Son {Jesus} has eternal life;
he who does not obey the Son shall not see life, but the wrath of God rests upon him."
(John 3:36)
