Week 17 - Day 5

regarding planting a vegetable garden
that you learned about in your Healthy Home Ec book.

Gather today's supplies and ingredients.
Plan this lesson 12-16 hours before you want to eat it.


Rinse your roast under cold water.


Pat dry with a paper towel.


Rub with Kosher salt.






Sear as directed on page 237
steps 6 and 7.








Once the roast is seared,
place in the crock pot.




De-glaze the skillet.


Chop the vegetables and add to the skillet.






Add to the crockpot.




Add the potatoes.
I left my potatoes whole,
as they were on the small side,
but you could also half or quarter them,
or cut into pieces.


Add the beef broth.


Add water to cover the meat and vegetables.


Cover and cook as directed.
See steps 17 and 18.

Week 17 - Day 4

Gather your supplies and ingredients for today.


Saute the onions as directed.


Combine all the ingredients as directed.


Spoon the filling into each tortilla as directed.


Fold the tortillas as we did
in Week 5, Day 3.


Cover with enchilada sauce.


Top with freshly grated cheese.


Bake as directed.


Serve and enjoy.


I sprinkled a little taco seasoning over the top
that we made on page 182.
This is optional.

Week 17 - Day 3

*Did you know that most French Onion Soup that you buy in a restaurant contains MSG,
or Monosodium Glutamate?
What is MSG?
Is it harmful?
Find out by reading page 232 in the Healthy Home Ec book.

Get all your supplies and ingredients ready.


Slice the onions.


Caramelize the onions as directed in the Healthy Home Ec book
on page 231.








Add the beef broth.
Cook as directed.




Ladle into oven-proof bowls or ramekins.




Add the sliced French bread.
I used multi-grain French bread without preservatives.


Add the Swiss Cheese.
You can use slices, as I did,
or shred your own from a block of cheese.


Set bowls onto a cookie sheet.
Broil until golden brown.
Keep your eye on it, as it could burn quickly.








Using potholders,
place the hot bowl or ramekin on a plate to take to the dinner table.






You could serve this with a fresh green salad,
or with the remaining French bread with butter.


Discuss MSG with your family during tonight's dinner discussion.
