Week 9 - Day 4

*Tilapia is now considered by some resources to be the 5th most popular seafood consumed in the United States.
*From where does tilapia originate?
*Why do many people prefer tilapia?
*We are told to eat fish once or twice a week.  Do some research on your own to
gain wisdom and discernment over the fish controversy.
(see page 127 in your Healthy Home Ec book)


 Gather your supplies and ingredients.




 Juice the lemon and lime as instructed on page 126, step 1.




Follow the procedure for steps 2-5 to make the lemon basil sauce.






Rinse the tilapia fillets and pat dry.


 Drizzle the fillets with oil to coat both sides.




Add the seasonings.


Read the labels on lemon pepper seasoning.
Most have added ingredients that aren't good.
Organic seems to be the best choice with all natural ingredients.


Add the lemon pepper to the fillets.
Cook fish until white and flaky.


Once cooked, transfer fish to a plate and drizzle with lemon basil sauce.










This lemon basil sauce can be used over any fish.

In addition to tilapia, one of my favorite fish is tuna steaks.
Tuna steaks are great when grilled.








This is one of the reasons I love living in the Midwest.

Week 9 - Day 3

*What is couscous and from where did it originate?
*What does Feta cheese contain that is good for you?

Find out in today's lesson on pages 124-125.


It's a blessing to be back in the kitchen with you again.
Gather your supplies and ingredients and let's get started.




Chop and dice the vegetables.












Measure the desired amount of chicken broth.


Juice the lemon.


Saute the onion and garlic as directed.


Add the chicken broth and bring to a boil.


Add the couscous.
Follow steps 4 and 5.
Step 5 should read, "Remove from heat, and let stand for 5 minutes."



Dice the tomato.




The finished couscous:


Add all the remaining ingredients to the couscous.


Fluff lightly with a fork.


Transfer to a serving bowl,
and follow step 8.




Follow step 9.




 Serve as the main dish or as a side.

When we lived in Florida, we planted a lemon tree and an orange tree
and our next door neighbors planted a lime tree and a grapefruit tree
so we could share the fruits.
These are my children when they were young
picking oranges from our young orange tree.




Week 9 - Day 2

*Coconut milk is a very nutrient-dense food that contains what nutrients?
*What is arborio rice?
Find the answers to these questions in the Healthy Home Ec book on pages 122-123.

Gather your supplies and ingredients.


 Add the butter and oil to the pan.




Stir in the rice and cook according to step 2.




Add the juice according to step 3.




Add the milk products, no more than 1/4 cup at a time,
and stir constantly after each addition until the liquids are fully incorporated.
This took about 40 minutes for me,
so be patient!




The rice will begin to be thick and creamy.


When using a manual can opener,
open both sides of the can to allow for easy pouring.






                                                           Continue to stir constantly.


Scrape the sides of the spoon often
or the rice that sticks to the spoon won't get cooked.




After all the milk products have been added,
add the honey.



  
 My rice wasn't cooked to my preference,
so I added another 1/2 cup of white grape juice, stirred it in,
heated to just a boil, then removed the pan from the heat,
covered it, and let it set for another 15 minutes.


Not all of my children like raisins, so I added them to the top of individual bowls
instead of stirring them in to the entire rice mixture.


I also added a sprinkle of ground coriander before adding the dried fruit.
