Week 9 - Day 2

*Coconut milk is a very nutrient-dense food that contains what nutrients?
*What is arborio rice?
Find the answers to these questions in the Healthy Home Ec book on pages 122-123.

Gather your supplies and ingredients.


 Add the butter and oil to the pan.




Stir in the rice and cook according to step 2.




Add the juice according to step 3.




Add the milk products, no more than 1/4 cup at a time,
and stir constantly after each addition until the liquids are fully incorporated.
This took about 40 minutes for me,
so be patient!




The rice will begin to be thick and creamy.


When using a manual can opener,
open both sides of the can to allow for easy pouring.






                                                           Continue to stir constantly.


Scrape the sides of the spoon often
or the rice that sticks to the spoon won't get cooked.




After all the milk products have been added,
add the honey.



  
 My rice wasn't cooked to my preference,
so I added another 1/2 cup of white grape juice, stirred it in,
heated to just a boil, then removed the pan from the heat,
covered it, and let it set for another 15 minutes.


Not all of my children like raisins, so I added them to the top of individual bowls
instead of stirring them in to the entire rice mixture.


I also added a sprinkle of ground coriander before adding the dried fruit.
This is optional.
