Week 2 - Day 5


*Today's recipe has a secret ingredient.  It has a high nutritional value and is extremely rich in antioxidants, Vitamins A, C, E, K, B2 and B6, magnesium, manganese, folate, betaine, iron, niacin, potassium, folic acid, copper, protein, phosphorus, zinc, selenium, omega-3 fatty acids, and calcium.

Can such an ingredient be in ice cream???

If you've already read today's lesson, you know this ingredient is one of the following.  Is it:
A.  Fresh, organic peppermint
B.  Fresh, organic spinach
C.  Fresh, organic cucumber     or
D.  Sugar
(Hint:  It is NOT a sweetener; it is not shown in the pictures below.)

You can find out what each of these nutrients does by looking them up in Lesson 9 Day 1 (pg. 116).

Gather your ingredients for today's easy and delicious recipe.  


 The frozen juice concentrate is sweetened only with natural fruit juices, not sugar.
Other varieties are mentioned in the Healthy Home Ec book.
 Wash the lime, and then slice into quarters.


Slice the pineapple as shown in the pictures below.  Start by cutting off each end.






Set the pineapple upright on a cutting board.


Trim off the outside edges.










Cut into quarters.






For today's recipe, keep the inner core; to eat fresh, hold the quartered piece of pineapple upright, and trim off the inner core.  Store the remaining pineapple in an airtight container in the refrigerator.


Place all the ingredients (including the secret ingredient mentioned in your book) into a powerful blender that can crush ice.


I garnished my ice cream with a sprig of fresh peppermint.
