Week 4 - Day 2

*We learned on Day 1 of this week that not all sugars are created equal!
This is extremely important, knowing that sugar intake is linked to obesity, diabetes, and other
illnesses; and knowing that we learned in Week 1, Day 2, that the average American now consumes
about 170 pounds of sugar per year!  
That's significant!
While I recommend extremely reducing our sugar intake,
if we are going to consume sugars,
it's best to substitute a raw, natural sweetener for white, refined sugar.

Gather your ingredients and supplies.
Today's recipe is a high energy food.


Grind your 2 varieties of wheat to make the flours.
Do you remember what Kamut is, from page 58 in the Healthy Home Ec book?






Combine the Kamut flour with the milk mixture.
 (See ingredient list and step 2 on page 57)
(I added the flour to the milk, but you could also add the milk to the flour.)




Stir to blend; allow to soak as directed.


Measure the correct amount of butter.
Note why butter is better than margarine on page 58 of the Healthy Home Ec book.


I haven't had a microwave for almost 2 years now, so I melt my butter in a small saucepan.
If you melt the butter in the microwave, make sure you use a microwave-safe container,
and cover it with a paper towel so you won't have a mess to clean up in the microwave later.
Add the melted butter to the raw sugar.




Crack the egg into a measuring cup, then add to the sugar mixture.




Blend until smooth.


Mix together the remaining dry ingredients.




Combine all the ingredients.














Fill the muffin cups as directed.
(Use paper muffin cups if desired.  If not, be sure to spray the pan with a cooking spray.)






Bake as directed.


Allow to cool slightly before eating and enjoying.
