Week 2 - Day 3



 *Find out the definition of "Ratatouille" in today's lesson, as well as the ingredient used in today's recipe that has been used medicinally to increase the immune system and treat skin infections, particularly acne.

Good to be with you again!  Gather your supplies and ingredients after reading today's lesson in the Healthy Home Ec book.


Review the ingredients and measurements in the Healthy Home Ec book.  Not all the ingredients are shown below.
Saute the garlic in extra virgin olive oil for the white sauce.


Add the fresh milled flour and blend.


Slowly add the organic chicken broth...



...and organic milk.  Heat and whisk over medium heat until thick and bubbly.


You can add the spices to the vegetables, but today I added them to the white sauce.

Red Pepper Flakes

Sea Salt and fresh milled Black Pepper

Oregano and Basil
I couldn't find Japanese eggplant for today's lesson, which I like the best, so I used a regular eggplant.
(A Japanese eggplant is long and thin and has a thinner skin.)


Chop the vegetables as shown and as directed in the Healthy Home Ec book.














Saute the vegetables as directed.


You can eat the Ratatouille by itself with the white sauce...


...or pour over any pasta.  We like Saffron Noodles, but I was not able to find them for today's lesson so I used Amish wide egg noodles.
