Week 12 - Day 3

*Why is chicken soup good for you,
especially if you have a cold or flu symptoms?
*What two ingredients in this soup act as natural antibiotics?
Find out the answers to these questions on pages 159-160
in your Healthy Home Ec book.

If you have more than 4 people eating today's soup,
or if you're planning on freezing some soup, 
or giving some extra to a friend who may be feeling ill,
you'll want to double this recipe.

Gather your supplies and ingredients.


Saute the garlic and onion in extra virgin olive oil.


Add the organic chicken stock and water.


Add the chicken bouillon.
(Don't use the cubes.  Read the ingredients.)


Wash the organic chicken thighs.


Add them to the stockpot
and cook as directed on page 163.
(step 5)


While the chicken is cooking,
dice the carrot and celery.


Keep fingers out of the way when cutting.






Once the chicken has cooked for the directed amount of time,
remove it and allow to cool enough to handle.




Add the vegetables to the hot chicken broth
and cook until tender.
(step 10-11)




Remove the chicken from the bone.
Discard the bones and the skins.




Once the veggies are cooked,
add the chicken back to the stockpot.




Remove from heat and add the spices.


Stir to blend.








This soup goes great with the Easy Drop Biscuits you made
in Week 11 Day 2.
Add some Italian Seasoning to the biscuits to make a savory biscuit.



If you are making this soup
because someone is feeling ill
with cold or flu symptoms,
a hot tea, such as organic Echinacea Plus with honey,
would also be beneficial to open sinuses,
relieve congestion,
and help build the immune system.
