Week 13 - Day 4

*What is pancetta and arugula?
*What makes arugula good for you?


Gather your supplies and ingredients for today's lesson.


Chop the parsley.


Mix together the first 8 ingredients listed on page 179.


Freshly grate your own Romano cheese.




Add the ground turkey.


Spread the pancetta on the parchment paper as directed.


Add the turkey mixture to the center of the pancetta.


Wrap the pancetta around the turkey mixture.








Wrap the parchment paper around the meatloaf.




Turn the meatloaf over to keep the edges of the paper down.




Bake as directed.


Make the arugula sauce for a topping.
Sundried tomatoes and Montchevri Goat Cheese toppings are optional.


Once cooked, cut the meatloaf into slices.


Add the desired toppings.




This piece contains a thin slice of goat cheese.
