Week 16 - Day 2

My mother-in-law was a wonderful cook.
Today's recipe is one that she used to make often for her children when they were young,
and I in turn made it for my children when they were young.
They are older now, but still love this quick and easy breakfast.
It could also be named "eggs in a nest".


Cut holes (or "nests") out of the whole grain bread,
or use a cookie cutter to cut out a shape.


Melt butter in the skillet.


Add the bread.


 Crack the eggs into a small bowl or measuring cup and add an egg to each "nest".


Flip the bread over when browned on one side
and cook the other side.




Top with raspberry fruit spread if desired.







You can also fry the circle pieces of bread that were cut out.
Kids love these.

If you have smaller children in your home, have them help you make this meal.
It will give them a sense of accomplishment,
it will build your relationship with them,
and they may learn to love to cook, too!
I started my children helping in the kitchen since they were very young.
