Week 13 - Day 3

*Did you know that:
~Lentils are one of the grains mentioned in the Bible?
~Lentils help manage blood sugar disorders?
~Lentils contain a high amount of fiber, vitamins, and minerals
and are known for significantly reducing the risk for heart disease if eaten regularly?

Gather your supplies and ingredients for today's hearty soup recipe.


Peel and dice the vegetables.










Add all the vegetables to the hot skillet.




Saute as directed.


Add the chicken stock and bring to a boil.


Rinse the lentils and add to the stockpot.






Add the bay leaf.
Because I have fresh bay leaves, and I absolutely love the smell and flavor of fresh bay leaf,
I added two.


Add the remaining seasonings.


Add the tomatoes.




Cook as directed.


The finished product.


Remove the bay leaves before serving.


Serve.
This soup goes well with fresh bread, whole grain crackers, or a fresh salad.
